Vineyard sites in Monterey are focused within two cool, northern appellations.The Arroyo Seco region was an ancient riverbed and reveals sandy soils with many cobblestones.The Santa Lucia Highlands region is situated on an alluvial bench of well-drained,sandy-loam soils along the Western slope of the Salinas Valley.In Paso Robles,vineyard sites are focused within the renowned Templeton Gap.This gap is a natural opening of the coastal range due west of paso Robles.It allows cool ocean breezes to reach the vineyards every afternoon..These vineyards are also focused on steep hillsides with high quantities of calcareous soil.
This dedication to quality continues in the cellar,where fourth-generation winemaker Anthony Riboli and associate winemaker Arnaud Debons employ traditional techniques to create a flavorful style with ripe fruit and soft tannins.Individual vineyard lots are fermented separately to preserve the distinct flavor characteristics or terroir of each parcel of land.After fermentation,wines are aged in oak barrels from numerous French and American coopers.Careful blending creates the greatest degree of complexity and insures consistency of style from vintage to vintage.

The Riboli famiy has been committed to quality winemaking since Santo Cambianica founded the original San Antonio winery in 1917
Santo Cambianica’s nephew Stefano Riboli has continued his uncle’s winemaking tradition since he arrived from Italy in1936.We farm estate vineyards throughout California,including Napa Valley,Monterey,and Paso Robles. We selected our vineyards on the basis of terroir:the combination of climate,soil and water.Modern viticultural techniques allow us to further refine the flavors and aromas through clonal selections,trellising,leaf pulling,crop thinning,and deficit irrigation..
